  • 1 medium onion, thickly sliced
  • 2 large carrots, sliced into 1/4-inch rounds
  • 1 medium green or red cabbage, quarted lengthwise
  • 1/4 cup low-sodium chicken or vegetable broth
  • 1/4 tsp kosher salt, or to taste (optional)
  • 1/2 tsp pepper
  • 1/4 tsp red pepper flakes, or to taste (optional)
  • 2 Tbsp balsamic vinegar
