XanthophyllDefinition – Xanthophylls are yellow accesory pigments that often give leaves their color. Relevance – In plants, xanthophylls are thought to prevent sun damage and in humans, they grant protection to the eyes against blue light.

XylemDefinition – The inner core of a carrot. It transports water and minerals from the carrot plant’s roots to its leaves. Relevance – The xylem contains the majority of the calcium, magnesium and phosphorus present in carrots.
