YELLOW CURRIED LENTIL SOUP

Ingredients

  • 8 oz dried yellow lentils
  • 1 Tbsp vegetable bouillon powder
  • 1 tsp garam masala or curry powder
  • 1/4 tsp powdered ginger
  • 1/2 tsp garlic powder
  • 1/4 tsp red chili flakes
  • 3 cups water
  • 3 carrots, sliced
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 small red or yellow potatoes, chopped
  • 1 can canned diced tomatoes (may use fresh, if desired)
  1. Place all ingredients into a large pot. Stir well and bring to simmer.
  2. Cook for 35 to 40 minutes until all vegetables are tender. Adjust seasonings as needed.
