Ingredients
- 8 oz dried yellow lentils
- 1 Tbsp vegetable bouillon powder
- 1 tsp garam masala or curry powder
- 1/4 tsp powdered ginger
- 1/2 tsp garlic powder
- 1/4 tsp red chili flakes
- 3 cups water
- 3 carrots, sliced
- 1 red bell pepper, chopped
- 1 onion, chopped
- 2 small red or yellow potatoes, chopped
- 1 can canned diced tomatoes (may use fresh, if desired)
- Place all ingredients into a large pot. Stir well and bring to simmer.
- Cook for 35 to 40 minutes until all vegetables are tender. Adjust seasonings as needed.
