Roasted Winter Vegetables with Spices

Ingredients

  • 2/3 lb. sweet potato, carrot, or winter squash, peeled and cubed
  • 2 medium parsnips, cubed
  • 1 medium red onion, sliced
  • 1 lb. Brussels sprouts, halved
  • 1 clove garlic, minced
  • 1 1/2 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 2 tsp za’atar (or 1 tsp dried thyme and 1 tsp oregano, or 2 tsp Italian seasoning)
  • Freshly ground black pepper to taste
  • Sea salt (optional) to taste
