Classic Bruschetta

Ingredients

  • 2 cups diced, ripe tomatoes
  • 1/4 cup diced white onion
  • 2 cloves garlic, minced
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • 1/4 cup fresh sliced basil
  • Salt and pepper (optional, as desired)

Steps:
1. Toss together all ingredients and let stand for 30 minutes.
2. Serve at room temperature as an accompaniment for toasted bread (or veggie burgers or pasta).
