  • 2 15 oz no or low sodium black-eye peas, rinsed
  • 1 cup diced red bell pepper
  • 2 Tbsp diced jalapeno, seeds removed (optional)
  • 1 cup diced cucumber
  • 2 Tbsp chopped cilantro
