Ingredients
- 1 lb mini potatoes
- 8 oz green beans, trimmed
- 1 pint cherry tomatoes, halved
- 2 (5 oz) cans tuna, drained
- 1/4 cup pitted, chopped olives
- 1 (15 oz) can white beans, drained and rinsed
- 1 Tbs olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Steps:
1. In a large pot, boil potatoes until fork-tender. Let cool, then cut into bite-sized pieces.
2. While the potatoes are boiling, steam the green beans to desired tenderness, then cut into bite-sized pieces.
3. In a large mixing bowl, toss the tuna, potatoes, green beans, tomatoes, olives, and white beans with olive oil, salt, and pepper. Chill before serving.
