Chimichurri Sauce



1 cup parsley (or ½ cup parsley and ½ cup cilantro)
2 Tbsp fresh oregano (or 2 tsp dried)
ÂĽ cup red wine or cider vinegar
3 cloves garlic
Pinch red pepper flakes (optional)
1/3 cup olive oil
Salt and pepper, to taste


  1. Pulse parsley, oregano, vinegar, garlic, and red pepper flakes several times in a blender or food processor to roughly chop (or finely chop by hand).
  2. With the motor on low (or whisking continuously), slowly add the olive oil until the ingredients combine. Taste and season with salt and pepper as desired.
