If you visited any of Americas national parks on vacation this summer, you may have noticed some healthy new food options that are as attractive as the vistas. Under a new Healthy and Sustainable Food Program, the National Park Service has added fish ta-cos, lentil soup and local farm produce to the hot dogs and ice cream on its menus nation-wide. Each year the national parks feed some 23 million visitors. Says Jonathan Jarvis, NPS director, Theres no reason you should have to take a vacation from healthy eating when youre on vacation. Other added options include bison hot dogs, black-bean sliders, grass-fed beef and fresh tomato soup. The Statue of Liberty, which reopened on July 4 after cleaning up from Hurricane Sandy, now serves 15 meals under 550 calories, including turkey and veggie burgers.
