Q: Your Special Report on food safety (June) says that using detergent or commercial produce washes is not recommended for fruits and vegetables. Why not?

Answer :Detergents and antibacterial soaps arent recommended because the FDA doesnt have safety data about possible residue these products may leave on produce. The effectiveness of commercial produce washes has not been stan-dardized-and research suggests plain water, with a little scrubbing if necessary, works just as well. Tennessee State University scientists compared a produce wash, dilute vinegar and plain water and found that water can remove 98% of bacteria from the surface of fruits and vegetables. A similar test by Cooks Illustrated magazine gave the nod to a light mist of a 25% vinegar solution, followed by washing in plain water.
