Lichtenstein, DSc, director of Tufts HNRCA Cardiovascular Nutrition Laboratory, replies: The majority of research findings indicate the nutrient content of organic and conventionally grown plants is similar. The nutrient content depends on such factors as growing time, weather conditions, plant strain, storage conditions after harvesting, cooking method, and length of time between farm to table. Such factors are not related to farming practices, per se. With regard to nutrient content, in some cases frozen vegetables are higher than fresh due to quick processing and are usually more affordable.
