Ingredients
- 4 cups sliced mushrooms (such as button, cremini, or portobello)
- 2 Tbsp lemon juice
- 1 Tbsp finely chopped fresh chives (or scallions)
- 1/8 tsp salt
- freshly ground pepper to taste
- 2 tsp olive oil
1. In a medium bowl, combine the mushrooms, lemon juice, chives, salt, and pepper.
2. Let sit at room temperature for 10 minutes. Drain out excess liquid, toss with olive oil, and serve immediately or cover, refrigerate, and serve chilled on its own, in a green salad, or atop a piece of fish.
