Three-Bean Chili in a Jar
Enjoy this hearty one-pot meal to warm body and soul on a chilly winter

evening. Enjoy on its own or with cornbread and a simple salad.
Soup Mix Ingredients:
½ cup dried black beans
½ cup dried kidney beans
½ cup dried pinto beans
2 Tbsp chili powder
2 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
¼ tsp cayenne pepper (optional)
Salt and pepper to taste (optional)
Soup Mix Steps:
3. In an 8-oz or 12-oz clear jar or clear, food-safe bag, layer the black beans, kidney beans, and pinto beans, pressing gently to ensure defined, colorful layers.
4. In a small bowl, mix remaining ingredients. Seal in a small bag and place the spice blend on top of the beans.
5. Securely close the jar or bag and attach a decorative ribbon and tag with cooking directions.
Cooking Instructions For Recipe Card:
1. Rinse beans and drain in a colander. Add beans to a large stockpot, cover with two inches of water, and soak beans overnight (or, to quick-soak: bring to a boil, cover, and continue to boil for 5 minutes. Turn off heat, and let beans soak about two hours).
2. Drain and rinse beans and set aside.
3. Heat 2 tablespoons olive oil in the stockpot. Sauté 1 medium chopped onion and 2 minced garlic cloves.
4. Add the beans and spice mix, 1 14-ounce can diced tomatoes with liquid, and enough water or broth to cover (about 4 to 6 cups). Simmer until the beans are tender, about 30 minutes.

Spice it Up. Homemade salt-free and sugar-free seasoning mixes and herb and spice rubs enhance the flavor of foods in a heart-healthy way. Create your own seasoning and rub blends with versatile ingredients like onion and garlic powder, cayenne or red pepper flakes, and dried sage, rosemary, and thyme, or try one of the recipes that follow.
