Gulf Between Perception and Reality in Nutrient Intakes

Most Americans arent doing nearly as well in getting key nutrients as we think we are, according to the International Food Information Council. The new study of more than 1,000 US adults identified wide disparities between consumer perception and actual consumption. About two-thirds of those surveyed believe they are consuming enough potassium, fiber and vitamin D, while other surveys have found actual consumption of those nutrients in the general population ranges from 3% to 32% of the DRI (Dietary Reference Intakes). Individuals estimates of their intake for vitamin C and calcium were closer to reality, and respondents actually underestimated B vitamin intake.
